How to Prepare Rice for Cooking

Put the rice in a large bowl of water then quickly wash by gently rubbing and pressing down on the rice, and the discard the whitish water to avoid any bran odor. Repeat this 3-4 times and drain. Add water again and make sure that the rice is fully soaked. Let it sit for 20 minutes during the summer or 1 hour during the winter at room temperature before cooking.

Ingredients :

750g

2 teaspoons

3 teaspoons

3 teaspoons

1/2 cup

1 teaspoon

Chicken thigh fillets

Onion, chopped

Garlic, crushed

Grated fresh ginger

Lemon juice

Ground coriander

Ground cumin

Garam masala

Yoghurt

Salt

Method :
  • Soak 12 skewers in the water.

  • Cut the chicken into cubes of about 3 cm.

  • Place the onion, garlic, ginger, lemon juice and spice in a food processor and process until they are chopped finely.

  • Add the yoghurt and salt and process briefly to combine.

  • Thread the chicken pieces onto the skewers.

  • Place the skewers in a large baking dish; coat the chicken with the spice mixture, and marinate for at least 4 hours or overnight, covered in the refrigerator.

  • Cook the chicken on a hot barbecue grill or in a large, well greased frying pan over high heat for about 5 minutes each side or until the color turned golden brown and cooked through.


 

Yellow Rice (Nasi Kuning) Recipes

Ingredients :

1 tbsp vegetable oil

1 tsp ground turmeric

1 tsp ground coriander

1/2 tsp ground cumin

2 cups long-grain rice, rinsed

2 cups coconut milk

1 cup water

6-8 curry leaves

1 cinnamon stick

Method :

Heat oil in a large saucepan. Add turmeric, coriander, cumin and rice. Stir for 1 minute to coat rice and cook until aromatic. Add coconut milk, water, curry leaves and cinnamon stick and bring to the boil. Reduce heat to low and cook for 10-12 minutes or until liquid is absorbed. Transfer rice to a steamer and steam rice for 12-15 minutes, stirring from time to time or until grains are light. If you don't have a steamer, continue to cook rice on the lowest heat for 5-10 minutes or until cooked. Remove curry leaves and cinnamon stick and serve immediately.

Note - This rice is traditionally served at special occasions.
